  • homogenize the temperature of the musts during the fermentation
  • reduce, thanks to the vertical cooling jacket our model “Supertermostar”, the cooling time of musts produced
  • creation of a homogeneous mass for cold clarification
  • reduce refrigeration times in case of tartaric stabilization
  • drain the lees and facilitate their extraction from the bottom of the fermenter
